Meatloaf takes forever to cook. Unless you use this air fryer recipe. Quick and simple meal prep or weeknight dinner.

Ingredients

  • 1 pound extra lean ground beef

  • 1 egg

  • 1⁄4 cup onion (diced)

  • 1⁄4 cup red bell pepper (diced)

  • 1⁄4 cup no sugar added ketchup (divided in half)

  • 1 garlic clove (minced)

  • 1 teaspoon italian seasoning

  • Salt & pepper to taste

Steps

  • Preheat air fryer to 350°F.
  • In a bowl, combine all ingredients, reserving half the ketchup. Mix thoroughly.
  • Divide mixture in half and form into 2 meatloaves.
  • Cook in the preheated air fryer for 18 minutes.
  • Spread the remaining ketchup over the meatloaves and cook for an additional 7-10 minutes, or until they reach an internal temperature of 165°F.
  • Remove from air fryer and let rest for 5 minutes.
