Ingredients

  • 1 lb chicken breast

  • 1 tsp olive oil

  • Salt and pepper to taste

  • 1 cups dry pasta

  • 2 cups cherry tomatoes, halved

  • 4 cloves garlic, minced

  • Mini bocconcini, halved

  • 1 cup fresh basil

  • 1 tbsp extra virgin olive oil

  • 1/2 tbsp balsamic vinegar

  • 1/4 cup grated parmesan cheese

Steps

  • Start by cooking pasta as per the package instructions. Remove and allow to cool.
  • Preheat oven to 400°F. Season chicken breast with salt and pepper and place on a parchment lined baking sheet. Bake for 18-20 minutes until chicken reads 165°F on a thermometer.
  • Prep the rest of your ingredients while your chicken bakes.
  • In a bowl, combine your pasta, garlic, cherry tomatoes, bocconcini, basil. Season with salt to taste and top with extra virgin olive oil. Mix to combine.
  • Serve with 1/2 chicken breast and drizzle with balsamic vinegar. Enjoy!
