A delicious homemade mayonnaise with chipotle adobo

Ingredients

  • 1 egg yolk

  • 2 teaspoons Dijon mustard

  • 1 cup neutral tasting oil

  • Salt & pepper to taste

  • 1 tablespoon white wine vinegar

  • 1 chipotle from chipotle in adobo (chopped)

  • 1 teaspoon adobo sauce

Steps

  • Add yolk, mustard and white wine vinegar to a stand mixer and turn on medium speed with whisk attachment.
  • While running, slowly stream in oil.
  • Once emulsified, add salt, pepper,chipotle, and adobo sauce. Blend on low until combined.
  • Alternatively, combine 1/2 cup of mayonnaise with chipotle and adobo sauce.
