If you love chipotle, you have to try making this copycat chipotle chicken. Use it to stuff into a burrito bowl with some rice, peppers and jalapenos black beans.

Ingredients

  • 1 pound boneless skinless chicken breast (sliced in half horizontally)

  • 1 teaspoon olive oil

  • 3 1⁄2 tablespoons Chipotle in Adobo sauce (diced (half a can))

  • 1⁄4 cup red onion (chopped)

  • 2 garlic cloves (minced)

  • 1 teaspoon black pepper

  • 1 teaspoon salt

  • 1 lime (juiced)

  • 1 teaspoon dried oregano

Steps

  • In a bowl, combine chipotle in adobo & sauce, red onion, garlic, pepper, salt, juice from 1 lime, and dried oregano. Pour into a freezer bag or container.
  • Add chicken to bag, mix until everything is well coated.
  • Allow to marinate for 30 minutes, preferably overnight for maximum flavour.
  • When ready to cook, you have 2 options:
  • Pan fry: Heat pan to medium high heat. Add chicken and cook until it reaches an internal temperature of 165°F, about 4-5 minutes per side. Work in batches to prevent overcrowding in the pan.
  • Grill: If you’re in the mood for a richer flavour, heat grill to 400°F. Add chicken and cook until it reaches an internal temperature of 165°F, 6-8 minutes per side.
  • Once cooked, remove from heat, and let it rest for 5 minutes before cutting.
  • Serve it as tacos, with rice or as a burrito bowl with the Jalapeños Beans.
