  • 1 pound extra lean ground beef

  • 1 onion (diced)

  • 5 grams olive oil

  • 3⁄4 cups beef stock

  • 2 teaspoons garlic powder

  • 1 tablespoon chili powder

  • 1 tablespoon oregano

  • Salt & pepper (to taste)

  • 4 quest protein tortilla chips

  • 1 cup sharp cheddar cheese (shredded & divided)

  • 4 tablespoons sour cream (divided)

  • Lettuce & tomato (optional)

  • Heat a large pan over medium high heat. Add in your oil and onions and cook until translucent, about 3-4 minutes.
  • Add in your extra lean ground beef, leaving alone and allowing to get colour on the bottom. Once there is nice browning, about 4-5 minutes, break up with spoon and cook through.
  • Add in garlic powder, chili powder, oregano, salt and pepper. Also add in beef stock, stir and cook down on low heat until all the stock has cooked out.
  • Assemble taco by adding 1/4 of the beef, 1/4 cup cheddar cheese, 1 tbsp sour cream and any other topping you’d like. Enjoy!
