Jalapeno Popper Cauliflower Mac and Cheese

We took a jalapeno popper and made it into a cauliflower mac and cheese. Got a problem with that?!

  • 1 head cauliflower (cut into florets)

  • 2 teaspoons oil

  • 2 garlic

  • 1 cup milk

  • 4 ounces cream cheese (softened to room temperature)

  • 1⁄4 cup grated parmesan

  • 1⁄2 cup light sour cream

  • 1 can sliced jalapeños

  • Salt and pepper to taste

  • 1 cup shredded pepper jack cheese

  • 1 cup sharp white cheddar

  • 4 bacon slices


  • Preheat oven to 450°F. Lay cauliflower on a baking sheet, spray with oil and season with salt. Bake until golden brown, tender but not mushy (15 minutes). Remove from oven and set aside. Turn the oven down to400°F.
  • Combine shredded cheeses in a bowl.Mince garlic. Cook bacon in a non-stick pan. Remove from pan onto a paper towel, chop into bite-size pieces and set aside.
  • In a large pan over medium heat, heat oil.Cook garlic until fragrant. Add milk, parmesan, and cream cheese. Heat and whisk until everything is melted. Turn down to low. Add in 1 1/2 cups (3/4) mixed cheese and stir to melt.
  • Remove from heat. Add in sour cream, jalapeños, half of the bacon chunks, and roasted cauliflower. Stir and taste for seasoning (add salt and pepper if needed).
  • Grease a square baking dish. Dump in mixture. Top with remaining cheese. Bake in a 400°F oven until bubbly (15-20minutes). Remove and top with remaining bacon.
