Ingredients

  • 6 large eggs

  • 1.5 tablespoon yogurt

  • 1⁄4 teaspoon salt

  • 6 teaspoons mozzarella cheese (shredded)

  • 6 pepperoni slices

  • Basil to finish (optional)

Steps

  • Preheat oven to 350°F.
  • Beat together 6 large eggs and yogurt 1.5 Tbsp until well combined and fluffy.
  • Spray muffin tin with non-stick cooking spray.
  • Fill muffin tin 1/3 of the way.
  • Place 1 tsp cheese and 1 pepperoni on each frittata.
  • Bake for 13-17 minutes until eggs are cooked and fluffy with a slight giggle to the pan.
  • Remove from heat and top with a piece of fresh torn basil.
