A quick and easy homemade enchilada sauce.

Ingredients

  • 2 tablespoons extra virgin olive oil

  • 2 tablespoons gluten free flour

  • 2 tablespoons chili powder

  • 1 teaspoon garlic powder

  • 1 teaspoon mexican oregano

  • 1⁄2 teaspoon ground cumin

  • Salt & pepper to taste

  • 2 tablespoons tomato paste

  • 2 vegetable stock

Steps

  • Heat oil in a medium saucepan over medium heat. Add flour and spices, whisk continuously until the flour begins to lightly brown.
  • Stir in tomato paste until combined.
  • Slowly add the stock, whisking constantly to ensure no lumps form.
  • Bring the mixture to a boil, then reduce heat and let it simmer for 5-7 minutes until the sauce begins to thicken.
  • Remove from heat, taste, and adjust seasoning if needed.
