This vegetarian ricotta breakfast pizza is a game changer for breakfast lovers. Topping a piece of Naan with Ricotta, pesto and a whole egg is a great, quick and easy way to start your day!

Ingredients

  • 1 naan

  • 1⁄4 cup ricotta

  • 2 tablespoons pesto

  • 1⁄2 teaspoon lemon zest

  • 1 large egg

  • 1⁄4 cup shaved parmesan

  • Basil & pepper to garnish

Steps

  • Preheat oven to 425°F.
  • Lay down naan bread on a baking tray.
  • Mix ricotta with lemon zest and spread the mixture onto naan bread.
  • Dab on pesto evenly across the naan.
  • Create a well in the center of the ricottamixture and crack the egg into it.
  • Top the pizza with shaved parmesan.
  • Bake for 8-10 minutes or until the egg isset.
  • Garnish with fresh basil and pepper before serving.
