10 Minute Chicken & Pepper Chow Mein

Ingredients
1/2 pound 1/2 chicken breast, boneless skinless, diced
1 tsp 1 olive oil
1 1 sweet pepper, sliced into rings, seeds removed.
1 cup 1 snap peas
Chow Mein Noodles
2 tbsp 2 soy sauce
2.5 tbsp 2.5 hoisin sauce
1/4 cup 1/4 chicken stock
1 tsp 1 toasted sesame oil
2 tsp 2 corn starch
Pepper to taste
Steps
- Fill a kettle with water and bring to a boil while you dice your chicken, slice your pepper and clean your snap peas.
- Heat a wok or large pan over high heat and add your oil.
- Place your noodles in a pot, cover with boiled water from the kettle and bring back to a boil on the element over high heat. Cook to package instructions.
- Once oil in the pan is shinny, add in your chicken breast and let cook for 1 minute per side until it starts to brown. Flip and brown the other side.
- Add in your peppers and and snap peas and cook for another 2-3 minutes until the chicken is cooked through, 165°F internal temperature.
- While that cooks, add your soy sauce, hoisin sauce, chicken stock, toasted sesame oil and corn starch into a bowl and combine.
- Add your cooked noodle to your wok or pan, and your sauce. Stir continuously for 1 min to 90 seconds maybe tossing a few times to make sure everything gets coated.
- Remove from heat, serve and enjoy this one!
