Ingredients
1⁄2 cup rice
1 cup chicken stock
1 onion (Sliced)
2 red bell peppers (Sliced)
5 garlic cloves (sliced)
1 pound extra lean ground beef
1 cup basil
2 tablespoons soy sauce
1 tablespoon Sriracha or chili paste
1 tablespoon fish sauce
1 tablespoon coconut sugar (or brown sugar)
Steps
- Combine all sauce ingredients and mix until sugar is dissolved.
- Heat a Wok or large non-stick pan over medium-high heat. Spray with cooking spray and add in the ground beef. Cook until all the liquid has cooked out of the bottom of the pan.
- Add in Garlic, Onion, and Pepper. Cook until fully cooked through, about 5 minutes, stirring constantly to ensure garlic doesn’t burn.
- Add in Basil and cook until wilted, about 30 seconds.
- Top with sauce and cook for another minute until the sauce starts to get sticky.
- Serve on top of 1/4 of the cooked rice.
