This quick basil and beef meal prep is so simple. If you don’t have time to meal prep, give this recipe a try.

Ingredients

  • 1⁄2 cup rice

  • 1 cup chicken stock

  • 1 onion (Sliced)

  • 2 red bell peppers (Sliced)

  • 5 garlic cloves (sliced)

  • 1 pound extra lean ground beef

  • 1 cup basil

  • 2 tablespoons soy sauce

  • 1 tablespoon Sriracha or chili paste

  • 1 tablespoon fish sauce

  • 1 tablespoon coconut sugar (or brown sugar)

Steps

  • Combine all sauce ingredients and mix until sugar is dissolved.
  • Heat a Wok or large non-stick pan over medium-high heat. Spray with cooking spray and add in the ground beef. Cook until all the liquid has cooked out of the bottom of the pan.
  • Add in Garlic, Onion, and Pepper. Cook until fully cooked through, about 5 minutes, stirring constantly to ensure garlic doesn’t burn.
  • Add in Basil and cook until wilted, about 30 seconds.
  • Top with sauce and cook for another minute until the sauce starts to get sticky.
  • Serve on top of 1/4 of the cooked rice.
