Ingredients

  • 8 ounces package chickpea penne

  • 4 egg yolks

  • 1 cup pecorino Romano cheese

  • 100 grams pancetta or bacon (cubed)

  • 1 pound chicken breast (cubed)

  • Salt & pepper to taste

Steps

  • Start a pot of boiling water and cook pasta to package instructions. Save 1/2 cup of pasta water and set aside.
  • Heat a large pan over medium heat and cook pancetta or bacon until crispy. Remove from pan, wipe out grease and return pan to heat.
  • Season chicken breast with salt and pepper and place into hot pan, cooking until 165°F internal temp. Remove from pan and set aside.
  • In a bowl combine pecorino cheese and egg yolks. Stir to combine and then add in a little bit of hot pasta water at a time, stirring continuously. Continue adding small amounts and stirring until you get a nice creamy sauce.
  • In your pan, add you pasta, then your pecorino cheese sauce. Stir continuously over medium heat until everything is nice, creamy and coated. Add in pancetta and chicken, stir and serve with fresh cracked black pepper if desired.
