🍎 Apple Pie for Breakfast?! You bet your ass! Enjoy this Apple Pie Yogurt parfait with over 40g of protein!

Ingredients

  • 3 apples (Fuji or Honey crisp work best, peeled and diced)

  • 1 tablespoon no sugar brown sugar replacement (I used swerve)

  • 1 teaspoon cinnamon

  • 1⁄2 nutmeg

  • 1 tablespoon lemon juice

  • 1.5 fat free greek yogurt

  • 70 grams vanilla whey protein powder

  • 2 Tender Flake mini tart shells (mine are 100 calories each)

  • 1⁄4 teaspoon cinnamon (for topping)

Steps

  • In a pot, combine apples, No sugar brown sugar replacement, cinnamon, nutmeg and lemon juice. Mix and then place over low heat for 8-10 minutes or until everything cooks down and the apples get soft. Remove from heat and allow to cool slightly.
  • In a bowl combine your yogurt and protein.
  • Egg wash the top of your mini tarts and bake according to package instructions.
  • To assemble, scoop 1/4 of your apples into the bottom of a jar or bowl, top with 1/4 of your yogurt. Then add another 1/4 of your apples, another 1/4 of your yogurt. Top with the mini tart and a sprinkling of cinnamon. Enjoy!
