Take a chicken fajita and stuff it into a bowl. Did someone say Chipotle?

  • 6 skinless boneless chicken thighs (cut into thin strips)

  • 2 green peppers

  • 2 red peppers

  • 1⁄2 onion

  • 1 cup cooked rice

  • 2 chicken stock

  • 1 tablespoon chili powder

  • 1 teaspoon cumin

  • Salt & pepper to taste


  • Cook rice in chicken stock as per package instructions.
  • Combine chili powder, cumin, salt, and pepper.
  • Season chicken thighs with half of the seasoning mixture.
  • Heat oil in a pan over medium-high heat and cook chicken for 10 minutes, stirring occasionally until cooked through. Remove from pan.
  • Add onions and peppers to the pan, add remaining fajita seasoning. Stir fry on high heat for 3-4 minutes. Remove from pan.
  • Combine chicken and veggies and divide into 4 servings. Serve over 1/2 cup of cooked rice.
