Ingredients

  • 4 boneless skinless chicken breasts

  • 2 teaspoons oil

  • 1 onion (diced)

  • 1 red pepper (diced)

  • 1 yellow pepper (diced)

  • 1 orange pepper (diced)

  • 1⁄2 cup cheddar cheese (shredded)

  • Salt & pepper to taste

  • 2 teaspoons chili powder

  • 1 teaspoon paprika

  • 1⁄2 teaspoon cumin

  • 1⁄2 teaspoon garlic powder

  • 1⁄2 teaspoon onion powder

  • 1 teaspoon dried oregano

  • 1 teaspoon salt

  • 1⁄2 teaspoon cayenne pepper

  • 4 tablespoons sour cream

  • 8 tablespoons salsa

Steps

  • Preheat oven to 425°F.
  • Heat a large pan over medium-high heat. Add oil and cook diced peppers and onion. Season with salt and pepper. Cook for 5-8 minutes until soft with slight caramelization. Remove from heat and place in a bowl.
  • Add shredded cheese to the bowl, stir to combine, and taste for seasoning.
  • Combine ingredients to make fajita seasoning and set aside.
  • Cut a slit in each chicken breast, being sure not to cut through the other side, creating a pocket.
  • Season the outside and inside of the chicken breast with fajita seasoning.
  • Using a spoon, stuff 1/4 of the fajita stuffing inside each chicken breast.
  • Place the stuffed breasts on a parchment-lined baking sheet and bake for 20-25minutes or until an instant-read thermometer reads 165°F.
  • Remove from the oven and allow to cool slightly before handling.
  • Serve with a tbsp of sour cream and salsa.
