Slapping a little greek into some meatballs. No lamb here tho. That’s not as healthy as lean ground beef sadly

Ingredients

  • 1 pound lean ground beef

  • 1 egg

  • 1⁄2 cup panko bread crumbs

  • 1⁄4 cup feta cheese (crumbled)

  • 1⁄2 red onion (finely chopped)

  • 2 garlic cloves (finely minced)

  • 2 tablespoons fresh mint (finely chopped)

  • 1 teaspoon dry oregano

  • Salt & pepper to taste

Steps

  • Preheat Oven to 400°F.
  • Combine all your meatball ingredients into a large bowl. Mix until all the ingredients are combined.
  • Weight the mixture and divide by 20 to measure each meatball accurately.
  • Lubricate your hands using some olive oil and form balls, placing them on a parchment-lined baking sheet.
  • Bake for 18-20 minutes, watching to ensure they don’t overcook.
  • Remove meatballs when cooked through. Allow to cool.
  • Divide meatballs into 4, 5 meatball servings.
