This high protein version of chicken parmesan is air fried making it crispy and delicious!

Ingredients

  • 1 pound boneless skinless chicken breast

  • 1⁄2 cup panko bread crumbs

  • 1⁄4 cup white flour

  • 1 egg

  • 1 tablespoon water

  • 2 teaspoons parmesan cheese (grated)

  • 2 ounces pizza mozzarella (cut into 1 oz thick slices)

  • 1 tablespoon onion powder

  • 1 tablespoon garlic powder

  • Salt & pepper to taste

  • 1 batch Simple Marinara Sauce

Steps

  • Make one batch of Simple Marinara Sauce
  • Pound chicken breast until even thickness and cut in half.
  • Combine flour, salt, pepper, onion powder and garlic powder on one plate. Combine egg and water onto another plate. Combine panko and parmesan cheese on final plate.
  • Dip each bread in flour, then egg, then panko coating it in its entirety before moving on to the next step.
  • Place in preheated air fryer at 350°F for 8 minutes.
  • Top with 2 tbsp marinara sauce and 1 oz mozzarella cheese.
  • Return to air fryer for 3-4 minutes until internal temperature of 165°F.
  • Serve with remaining marinara.
