Protein Pancakes that are fluffy, high in protein and delicious. Serve with maple syrup and fruit if desired!

Ingredients

  • 1 cup oats (blended into powder (or 1 cup oat flour))

  • 1 1⁄2 all purpose flour

  • 3⁄4 cups protein powder of choice

  • 2⁄3 cups buttermilk powder

  • 2 tablespoons baking powder

  • 3 tablespoons coconut sugar

  • 1⁄2 tablespoon salt

Steps

  • Combine all dry ingredients and mixuntil combined.
  • Combine 2 to 1 Dry mix to water. Mix until it resembles pancake batter.
  • Heat a non-stick pan on med-high heat until warm and then turn down heat to medium.
  • Spray pan with non-stick cooking spray and scoop in 1/4 cup protein pancakes batter.
  • Cook for 2 minutes until bubbles start to form and flip. Cook for another 2 minutes.
  • Remove and top with your favourite toppings! Don’t forget the delicious maple syrup!
