Jalapeno Black Beans make for a great breakfast, snack or on top of a burrito.

Ingredients

  • 1 tablespoon unsalted butter

  • 1⁄2 cup onion (diced)

  • 1 jalapeño (diced, spine and seeds removed, if preferred)

  • 15 ounces can pinto beans (drained and rinsed)

  • 1⁄4 cup chicken stock

  • Salt & pepper to taste

Steps

  • Heat a large saucepan over medium-high heat. Melt butter in pan.
  • Add in onion and jalapeño, cooking for 2-3 minutes until onion is translucent, stirring occasionally.
  • Add in beans and chicken stock. Lower Heat to medium and cook for 10 minutes, mashing the beans occasionally to form a paste.
  • Once liquid has cooked out, remove from heat and season with salt and pepper to taste.
  • Chill and serve with the Chipotle chicken, in a bean burrito or as a hearty side dish to any protein.
