Ingredients

  • 1 ribeye steak (sliced against the grain)

  • 1 green bell pepper (sliced)

  • 1⁄2 yellow onion (sliced)

  • 1⁄2 mushrooms (sliced)

  • 3 ounces provolone cheese slices

  • 2 teaspoons oil

  • Salt & pepper to taste

  • 1 cup rice of choice

  • 2 beef stock

Steps

  • Combine rice and stock, cook rice until fully cooked through.
  • In a large skillet, heat 1 tsp oil over medium heat and cook onions, mushrooms, and peppers until fully cooked through. Remove from pan on to a clean plate.
  • Return pan to heat, turn up to medium-high heat and add in 1 tsp oil. Add beef, season with salt and pepper and cook until beef is cooked through, about 2-3 minutes.
  • Add vegetables back into the skillet, mix to combine and place 3 slices of cheese on top. Melt cheese, about 1 minute.
  • In a bowl, add 1/2 cup of cooked rice,and 1/2 of the Philly Cheesesteak mixture. Top with banana peppers and a pinch of dried oregano.
