A beautiful salmon fillet covered in a sweat mustardy pistachio topping

Ingredients

  • 2 salmon fillets (6-7 oz)

  • 1 tablespoon Dijon mustard

  • 1 tablespoon olive oil

  • 1 clove of garlic (crushed)

  • 1 tablespoon lemon juice

  • 1 teaspoon maple syrup

  • 1⁄4 cup crushed pistachios (roasted and salted)

  • Salt & pepper to taste

Steps

  • Preheat oven to 375°F.
  • Pat dry each salmon fillet and season each one generously with salt and pepper.
  • In a bowl, combine the Dijon mustard, lemon juice, crushed garlic, olive oil, and maple syrup.
  • Brush the salmon fillets with the mustard-maple mixture.
  • Combine the remaining mustard mixture with the crushed pistachios and mix.
  • Top each fillet with half of the pistachio mixture, gently pressing down to stick.
  • Bake for 12-15 minutes.
  • Remove from oven and serve.
