  • 1 scoop (35g vanilla whey protein)

  • 1 cup 0% greek yogurt

  • 4 lady fingers

  • 1⁄2 cup espresso or strong coffee (cooled)

  • 1 tablespoon unsweetened cocoa powder for dusting


  • In a bowl combine, greek yogurt and vanilla protein powder. If it’s too thick, you can use 1 tsp or 2 of almond milk to thin. Add 1 tsp of espresso. Mix and set aside.
  • Pour your espresso or coffee into a shallow bowl and drop 3 lady fingers in. Flip once the lady fingers begin to take on some liquid but aren’t getting soggy.
  • In a bowl, layer your yogurt parfait with 1.5 coffee soaked lady fingers, 1/2 of your yogurt mix, 1.5 coffee soaked lady fingers and the remaining yogurt. Crumble your last lady finger on top and dust is cocoa powder.
