If your not familiar with stroganoff, it is a creamy sauce served over egg noodles. Here is my high protein version of that.

Ingredients

  • 1 pound turkey breast (sliced into strips)

  • 1 cup baby button mushrooms (sliced)

  • 2 garlic cloves (minced)

  • 1⁄2 onion (diced)

  • 1 tablespoon worcestershire sauce

  • 2 tablespoons butter

  • 2 tablespoons flour

  • 1⁄2 cup greek yogurt

  • 2 beef broth

  • Salt & pepper to taste

  • 1 cup dry egg noodles

Steps

  • Bring a large pot of water to boil cook egg noodles according to package instructions.
  • Heat a large saucepan over medium-high heat. Spray with non-stick cooking spray and add the turkey strips. Season with salt and pepper and cook for 3-4 minutes until no longer pink, stirring frequently to ensure they do not stick to the bottom of the pan. Once cooked through, remove from the pan onto a clean plate and set aside.
  • In the same pan, add in 2 tbsp of butter. Once melted, add onions and sauté for 3 minutes or so. Add mushrooms and sauté for another 5-7 minutes,stirring occasionally, until the mushrooms are cooked, and the onions are soft and translucent. Add the garlic and sauté for 30 seconds, until fragrant stirring frequently. Add in 1/2 cup beef broth to deglaze the pan, scraping up any brown bits on the bottom of the pan. Let this cook down for 2-3 minutes until most of the liquid has cooked off.
  • Whisk together remaining beef broth, Worcestershire, and flour in a bowl until smooth. Pour mixture into the pan, stirring to combine with the vegetables, and simmer on low for 5 minutes, stirring occasionally. Add in Greek yogurt, stirring to combine and adding the turkey and all its juices. Taste for seasoning.
  • Divide into 4 portions over egg noodles.
